If you assumed people with blood sugar disorders like diabetes or insulin resistance shouldn’t enjoy pasta, think again.
My doctor initially thought the same and recommended I cut it out of my diet entirely, but pasta has been a staple food in my life since college.
Because it’s so versatile and affordable, it’s a dish I eat at least once a week. I knew I had to find a way to enjoy it, despite being insulin resistant. :P
This recipe takes advantage of two blood sugar hacks that prevents the pasta from spiking your blood sugar:

This recipe is bright, refreshing, and delicious but most importantly a nutritious way to fuel your body without worrying about your blood sugar.



INGREDIENTS
For the Salad…
1 box (12 oz) tri-color rotini pasta
6 oz cherry tomatoes - cut into halves
1 small broccoli head - cut into florets
2 medium carrots - sliced into thin matchsticks
1/4 red onion - sliced
8 oz mozzarella cheese pearls - cut into quarters
4 oz reduced sodium dry salame - cut into 1/2 inch pieces
Substitute for any other cured meat
For the Italian Vinaigrette Dressing…
1/2 cup red wine vinegar
1.5 cups olive oil
1 tsp mayo or dijon mustard
juice of 1-2 lemons
1 garlic clove - grated
1 tsp salt
1/2 tsp black pepper
1/2 packet stevia or sweetener of choice
1 tsp italian seasoning
INSTRUCTIONS
Cook the pasta according to the box. Be sure to cook thoroughly and not al dente.
Whisk together all the ingredients for the Italian vinaigrette dressing. Set aside.
Drain the pasta and ice to cool. Once cool to touch, transfer to a large bowl.
Add the tomatoes, onion, broccoli, carrots, mozzarella, and salame to the pasta. Gentle mix together until ingredients are evenly distributed.
Pour the vinaigrette dressing over the pasta salad. Mix to coat evenly.
Enjoy and refrigerate for up to 5 days.
